
Chicken Penne Salad
Ingredients
- 200 g Primo penne cooked
- 100 g streaky bacon
- 1 chicken breast cooked and roughly shredded
- 1 heaped tablesponn mayonnaise
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon golden syrup/honey syrup
- Bell peppers assorted, chopped
- 1/2 Red onion
- Salt and pepper to taste
Instructions
- Cook the pasta until it’s soft. Drain then set aside to cool
- Fry the bacon then chop into small pieces
- In a large bowl, mix the mayonnaise, lemon juice, syrup, pepper and a pinch of salt
- Fold in the rest of the ingredients, except the avocado then refrigerate for at least 20 minutes before serving
