
Macaroni in Tomato Sauce
Ingredients
- 200 g Primo macaroni
- 1 large ripe tomato, chopped
- 2 tbsp tomato paste
- 3 cloves garlic minced
- 1 onion chopped
- 1 tsp dried parsley
- Salt & pepper to taste
Instructions
- Cook the macaroni al dente (soft but not overcooked). Drain any excess water and set aside. Keep about a cup of the pasta water
- In a pan, heat some oil then fry the onion on low heat for about 5 minutes
- Add the garlic and continue to fry for another minute or so
- Add the tomato paste and stir continuously for 2 minutes before adding the fresh tomatoes
- Cover and let the tomatoes cook down
- Add the pasta water, parsley, salt and pepper to taste
- Let the sauce simmer down for 5 minutes before adding the pasta.
- Cover and let it cook for 3 more minutes before serving
