    Macaroni in Tomato Sauce

    Ingredients
      

    • 200 g Primo macaroni
    • 1 large ripe tomato, chopped
    • 2 tbsp tomato paste
    • 3 cloves garlic minced
    • 1 onion chopped
    • 1 tsp dried parsley
    • Salt & pepper to taste

    Instructions
     

    • Cook the macaroni al dente (soft but not overcooked). Drain any excess water and set aside. Keep about a cup of the pasta water
    • In a pan, heat some oil then fry the onion on low heat for about 5 minutes
    • Add the garlic and continue to fry for another minute or so
    • Add the tomato paste and stir continuously for 2 minutes before adding the fresh tomatoes
    • Cover and let the tomatoes cook down
    • Add the pasta water, parsley, salt and pepper to taste
    • Let the sauce simmer down for 5 minutes before adding the pasta.
    • Cover and let it cook for 3 more minutes before serving
